We love this recipe for breakfast, but it also makes a great afternoon snack when you need a little pick-me-up.
Ingredients
Chia Pudding:
1/4 cup chia seeds
1 cup almond milk
1/2 teaspoon mint extract
1 ½ tablespoon matcha powder
1/2 tablespoon maple syrup or honey
1 scoop Beyond Greens
Top Layer:
2 frozen bananas
2 tablespoons cocoa powder
1/2 cup almond milk
Instructions
Mix your chia seeds, almond milk, mint extract, matcha powder, maple syrup, and Beyond Greens in a bowl, and whisk until everything is incorporated. Place in a container in the fridge for 1 hour or overnight to firm up. Once ready, remove from the fridge and whisk again to make sure there are no clumps. If your pudding is too thick, add a bit more almond milk.
In a blender, add your banana, cocoa powder, and almond milk, and pulse until smooth. Layer your chia pudding and the banana mixture into a glass or a mason jar to-go, and enjoy!
