Add or subtract some ingredients to suit your taste buds, and then enjoy. Remember, it can be frozen, so we suggest doubling the recipe and keeping some on hand for those chilly days when you need a boost, and you don’t have the energy to cook.
Ingredients
1 tablespoon olive oil (we suggest a spicy chili seasoned one for more zip)
1 cup onion, diced
⅛ teaspoon salt
⅛ teaspoon ground pepper
1 tablespoon ginger, use diced fresh ginger if possible
1 clove garlic, diced (or you can use 1 tablespoon pre-minced garlic)
¼ teaspoon ground turmeric
1 tablespoon apple cider vinegar
1 quart chicken bone broth (veggie stock for vegetarians)
2 cups spinach
2 cups kale
¼ cup cilantro (can omit if you can’t stand cilantro)
¼ cup dill leaves
3 tablespoons Collagen Peptides
Directions
In a large pot over medium heat, cook olive oil and the onion until the onion starts to caramelize. Add the salt and pepper. Remove from heat and add ginger, garlic, and turmeric. Stir to incorporate, and return to burner for another minute or two.
Add apple cider vinegar and cook for another minute or two. The vinegar will reduce dramatically. Add your broth and simmer for 10 minutes at medium high heat.
Remove from heat and let it cool. It doesn’t have to reach room temperature, but you don’t want it to be boiling hot either.
Once cooled, add the soup to the blender and combine with spinach, kale, cilantro, and dill. Don’t forget to add your collagen peptides. Blend slowly and increase speed until you have a smooth soup. If you like it thicker, add more spinach.
